Nkwobi have been around for a long time. It is an Igbo delicacy that is made with different kind of meats mostly cow leg or akwara anu (Artery) Your choice of meat can vary because the methods remain same.
2kg Meat (Goat, Cowtail, Assorted Meat)
Salt and Pepper to taste
Parboil your meat with some ingredients: Onion, maggi, and salt allow to cook for 40 – 50 mintues.
Slice your onion and utazi and set aside.
Most preparation take place in a mortar or pot. Boil the Ugba for about 2 to 3 minutes. Dissolve the potash in small water and filter into a pot add your palm oil into the pot stir to obtain a thick yellow paste.
Add meat, ugba and stir very well. Add the slice onions and utazi but reserve some to decorate the nkwobi. The utazi is very necessary because it adds a faint bitter taste which is an integral part of nkwobi.
